4 pieces of dried oatmeal chopped
2 tbsp. flaked coconut
Mix all together & microwave for 2 minutes. You can top with 1 tbsp. honey

Brooke's Best Bombshell Brownies
These brownies are to die for!! Definitely now WW freidnly - so eat in moderation. I gave away 3/4 of the pan because I have no willpower. My neighbors LOVED me!!
1 cup butter, melted 3 cups white sugar 1 tablespoon vanilla extract 4 eggs | 1 1/2 cups all-purpose flour 1 cup unsweetened cocoa powder 1 teaspoon salt 1 cup semisweet chocolate chips |
1. | Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish. |
2. | Combine the melted butter, sugar, and vanilla in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended. |
3. | Sift together the flour, cocoa powder, and salt. Gradually stir the flour mixture into the chocolate mixture until blended. Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish. |
4. | Bake in preheated oven until an inserted toothpick comes out clean, 35 to 40 minutes. Remove, and cool pan on wire rack before cutting |

Bread Machine Cinnamon Rolls
Dough:
1 cup plus 2 tablespoons warm milk
3 tablespoons canola oil
1 egg, lightly beaten plus 2 egg whites
1/2 cup sugar
2 cups bread flour (I substituted unbleached flour.)
2 cups unbleached flour (Add a bit more if dough seems too wet after first few minutes of kneading in the bread machine.)
1 teaspoon salt
3 teaspoons bread machine yeast
Filling (I doubled this since we like our filling, oh yes we do!):
2 tablespoons butter
2/3 cup brown sugar mixed with 1 tablespoon cinnamon
Icing:
1 teaspoon milk
1 1/2 cups confectioners sugar
4 tablespoons (or less) butter, softened
1 teaspoon vanilla
Put the dough ingredients in the bread machine in the order listed and run on the dough cycle. After the dough cycle is finished, roll the dough into a large rectangle and spread it with 2 Tablespoons melted butter and 2/3 cup brown sugar mixed with 1 Tablespoon cinnamon.
Roll up and cut into 10-15 rolls and place in two greased round cake pans. Bake at 325 degrees for 20 minutes or until browned. Spread the icing on as soon as they come out of the oven.
You can also cover the unbaked rolls with plastic wrap, stick them in the refrigerator overnight, and then bake in the morning.
We baked both pans, ate one pan, and froze the other. We were planning to use the second pan for this Saturday’s breakfast. But, ahem, it lasted all of one day in the freezer. I promise I wasn’t the sole one responsible for that, though.

Bread Machine Buttery Rolls
1/2 cup butter, softened
1/4 cup sugar (I used sucanat.)
2 eggs
1 teaspoon salt
4 cups flour (I used half fresh-ground whole-wheat and half unbleached flour.)
2 1/4 teaspoon active dry yeast

Baked Oatmeal
Ingredients
2 eggs ($.16)
1/2 cup applesauce ($.20)
3/4 cup sugar ($.15)
1 cup milk ($.10)
3 cups of quick cooking oats ($1)
1 tsp salt
1 Tbsp baking powder ($.05)
2 Tbsp brown sugar ($.05)
1 tsp ground cinnamon ($.05)
2 cup fresh blueberries ($2)
Vanilla or plain yogurt, or cream, or milk ($.50)
Directions
1. In large mixing bowl, whisk 2 eggs, applesauce, sugar and milk.
Once creamy, add oats, salt and baking powder and mix through. (If you wish to add in any fruits, add about 1 cup into the batter at this point.) **Gluten free: Use certified GF oats. They are expensive, but this dish would be worth it!
2. Pour batter into greased 9×13 baking dish. Sprinkle top with brown sugar and cinnamon. Bake at 350 for 30 minutes. Remove from oven and let cool for 5 minutes before serving. Don’t wait too long, as you want to serve it warm! Top with your preferred topping: vanilla or plain yogurt, or cream, or milk.

Apple Pie Turnovers - Hungry Girl Style
1 tbsp. granulated sugar
2 tsp. cornstarch
1 tsp. cinnamon
1/4 tsp. vanilla extract
1/8 tsp. salt
3 cups peeled and chopped apples (preferably Fuji)
6 large square egg roll wrappers (found in the refrigerated section of the supermarket with the other Asian items)
18 sprays I Can't Believe It's Not Butter! Spray (in other words, have a bottle handy!)
Directions:
Preheat oven to 350 degrees.
In a medium unheated pot, combine Splenda, sugar, cornstarch, cinnamon, vanilla extract, and salt with 1/2 cup cold water. Mix until the ingredients dissolve. Add apples and stir. Bring to medium-high heat on the stove and, stirring frequently, cook for 7 - 10 minutes, until apples are softened.
Remove the pot from heat and very lightly mash the apples in the pot with a potato masher or a spatula. (You don't want applesauce. It should remain chunky.) Return to low heat on the stove, and cook for 1 - 2 additional minutes, stirring often, until the mixture is thick and gooey. Remove from heat and set aside. This is your pie filling.
Prepare a large baking sheet by lining it with foil and/or spraying it with nonstick spray. Set aside.
Lay two egg roll wrappers flat on a dry surface. Set out a small dish of water. Dip your finger into the water, and run it along all of the wrapper edges. (Repeat as needed while preparing your pockets, as it will help seal them.) Starting 1/2 inch from the bottom, place about 1/3 cup pie filling along the bottom half of each wrapper, leaving a 1/2-inch border on the sides.
Bake in the oven for 15 - 18 minutes, until edges begin to brown. Allow to cool for 5 minutes before digging in!
